3rd

Ten days shy from its 3rd anniversary, Indulge was created in the spur of the moment. I was going thru a cooking and baking phase, trying new recipes with the family (or rather WeetaBiX) being my guinea pigs and what better than to share it with others.

Erratic posts have been common of late and there were times I wanted to give up and delete the blog. I'm not a quitter so I'm not going to do that. Henceforth, I will share anything and whenever I can but sticking to the essence of the blog ~ passion, hopes, dreams, sincerity and never giving up.

Finally

This is bad, random updates on this blog is not good but it does not mean I have stopped cooking nor try out new foods or eating places. Time has not been on our side in terms of work commitments and business.

We are now in the month of Ramadhan, so coming up with different dishes everyday has always been a challenge. However, working hours are less which gives me time to relax a bit and contemplate what to make for Iftar.

For the past week we've had different themes ~ from Indian (briyani), Italian (spaghetti bolognaise and baked macaroni & cheese), British (mashed potatoes with home-made fish fingers, prawns and button mushrooms deep-fried in breadcrumbs), Malay (nasi lemak) and Thai (pineapple fried rice and green curry chicken). Unfortunately, with a day's fasting comes hungry empty stomachs. We were too busy tucking in to our food we didn't even think about taking pictures.

I'm taking the day off today. WeetaBiX offered to make roast chicken, with roast potatoes and pumpkin. Yum! He's doing the prep now....the smell of fresh rosemary lingering.....

Tomorrow's theme is Mexican ~ tacos. The beef is already cooked and best left overnight for the spices to infuse. Since I'm off beef, I have some chicken strips marinated in fajita seasoning, ready to be fried.

Ok, will make sure there will be pictures of today's meal posted later today :). 'Til then wishing all our Muslim friends Selamat Berpuasa.

New York Cheesecake

At last, a perfect baked cheesecake with sour cream topping. Left to chill in the fridge overnight and served the next day with home-made mixed berry coulis.

Crème caramel

Ever had one of those days when you crave for something sweet but worried about the carbs? Well, crème caramel is the answer. With eggs, milk and sugar as the basic ingredients, they can be done within an hour. And of course it helps when it is baked in a super-heated steam oven :)

Semi or fully skimmed milk can be used but I opt for full cream. Of course, it tastes better.

Eclairs & donuts

Very fast and easy to prepare - choux pastry, which is used to make cream puffs and eclairs.

Made these a couple of days ago and instead of chocolate, I used caramel instead for the topping. Not perfect yet as can be seen from the picture below but it will be the next time round. The filling of course was creme patisserie, which Chibi complained was tasteless until he had the whole eclair complete with the caramel.


And today, we made donuts for the kids using our breadmaker to knead and rise the dough.
